This might be a dump question(s) but, if I do not know the answer . . well, I ask.
Am I understanding correctly that 2-phase motors are controlled by four wires and 3-phase motors are controlled by 3 wires?
That being the case then 3-phase motor could be connected thru existing four wire harness, ignoring one wire (because it is not needed)?
(I recognize that I would need appropriate 2-phase or 3-phase controller, etc. depending on motor choice.)

2 phase motor means that it is coming with two coils or two coils with center tap or four coils overall
The coil is labeled A+ A- and B+ B- or A1+ A1- A2+ A2- and B1+ B1- B2+ B2-
It could be fours wires or six wires(center tap) or eight wires (four coils)
For a 3 phase motor, it has 3 coils or 3 coils with center tap or six coils
You must use proper motor drivers for the motor. You can't use 2 phase motor driver for 3 phase motor or vice vera.
If you're changing motor from 2 phase to 3 phase (4 wires to 3 wires), yes you can leave one wire unconnected. The 3 phase motor connection is: U, V, W
